Salads are more than just cabbages or radishes or the two when made with jello gelatin. A jello gelatin salad is a flavorful and refreshing supplement that goes with every meal. Jello salads have been made with vegetables by a good number of people and they’ve proven it to be much better than ordinary salads. Here are some jello vegetable salads alongside their recipe and how they’re prepared.

Gelatin Cucumber Salad

This cucumber salad is said to have reigned in the past but it’s creamy, refreshing and perfect for hot days.


1 (3 ounce) of lime gelatin

1/2 cup of mayonnaise

1 Tbsp. of grated sweet pickle

A pinch of Salt

1 box of cottage cheese

1 cup of boiling water

1 tablespoon of grated carrots

1 tablespoon of grated cucumber

dash onion juice


First, blend the lime jello with hot water in a Pyrex baking dish. Leave until it cools. When thickened, beat the mixture until it becomes soft and light then add the mayonnaise. Gradually, add the grated carrots, cucumber, and the chopped pickle. Put in a pinch of salt then the onion juice. Lastly, include cottage cheese and refrigerate for at least 2 hours.

1/4 cup cold water

1 can beef broth

2 envelopes unflavored gelatin

1/4 Ts salt

2 Tbsp. lemon juice

1 cup salad dressing, e.g Miracle Whip

1 medium onion, quartered

1 package frozen thawed chopped spinach

4 hard-boiled eggs

1/2 pound cooked and crumbled bacon


Pour the cold water and quarter of the can beef broth into a blender then sprinkle with gelatin. Leave it for some minutes and allow the gelatin to soften. Apply heat to the mixture until its temperature rises a bit. Then put in lemon juice. Add a cup of salad dressing. Lastly, add the remaining ingredients, process it until well blended. Put in a mold and refrigerate.

Vegetable Trio


2 packages of lemon gelatin

1 Tbsp salt

2 cups of boiling water

2 cups of cold water

2 Tbsp vinegar

1½ cups of finely shredded carrots

1¾ cups of finely shredded cabbage

1 teaspoon of minced chives

1½ cups of finely grated spinach


Thaw the lemon gelatin by dissolving it in boiling water, then add salt. Next, add cold water and vinegar one after the other. Allow it to thicken slightly. Divide it into 3 portions. Fold carrot into one portion and then pour it into a 9×5×3-inch loaf pan. Allow it to settle but not firm. Fold chives into another portion and spinach into the remaining portion. Pour into the pan and allow it to become firm. Then unmold, slice and garnish with crisp greens.

Tangy Cabbage Salad


1 package of lemon, lime or orange gelatin

½ teaspoon salt

1 cup boiling water

1½ cup of cold water

2 teaspoon of vinegar

2 Tbsp prepared horseradish

1½ cups of shredded cabbage

1 Tbsp of chopped pimiento

¼ cups of chopped dill pickle

3 drops Tabasco sauce


Mix the gelatin and salt in boiling water. Then add cold water and vinegar. Allow it to slightly thicken. Add the remaining ingredients gradually. Then pour into a serving bowl.


Several Jello salads are creamy, delicious and refreshing. Even though most of them can be traced back to the previous century, they still seem to beat the future. Do well to incorporate at least one into your daily meal routine.
